摘  要:胶体物的存在会导致丙糖膏黏度高,提糖效率下降,赤砂糖容易结块。复配酶制剂应用结果表明,赤砂糖中胶体物含量下降84.40%,丙糖膏煮制时间缩短7.89%,分蜜时间缩短11.84%,结晶率提高0.28%,平均每罐丙糖膏多产赤砂糖775kg,废蜜减少953kg,可有效解决丙糖膏黏度大和赤砂糖易结块等问题,经济效益显著。The presence of colloidal substances will lead to high viscosity of massecuite C,decrease of sugar extraction efficiency and caking of brown granulated sugar.The application results of compound enzyme preparation showed that the content of colloidal substances in brown granulated sugar decreased by 84.40%,the boiling time of massecuite C shortened by 7.89%,the sugar-separating time shortened by 11.84%,and the crystallization rate increased by 0.28%.On average,each pot of massecuite C produced 775kg more brown granulated sugar and 953kg less final molasses,which could effectively solve the problems of high viscosity of massecuite C and caking of brown granulated sugar,and had significant economic benefits.
