摘　　要：低共熔溶剂是一种新型的绿色溶剂.与传统的有机溶剂相比,低共熔溶剂具有低成本、环保、安全等显著优势.目前,低共熔溶剂在天然产物的萃取分离、医药、油脂改性和生物催化等方面已成为研究热点.本文首先对低共熔溶剂的定义、分类及制备进行了介绍;随后对低共熔溶剂的物理化学性质进行了阐述;最后对其在油脂改性领域中的应用进行了归纳总结和展望,特别是对低共熔溶剂制备生物柴油、提取反应副产物、提高脂肪酶的反应活性及选择性、提高反应产率等方面进行了系统的归纳和总结.以期为未来低共熔溶剂在油脂改性中的应用提供理论参考.Deep eutectic solvent is a new type of green solvent.Compared with traditional organic solvents,deep eutectic solvent has a number of advantages such as low cost,environmentally friendliness,and safety.At present,deep eutectic solvent has become the research hotspot in the field of extraction and separation of natural products,medicine,oil and fat modification,biocatalysis,et al.In this review,the definition,classification and preparation of deep eutectic solvent are firstly introduced.Subsequently,the physical and chemical properties of deep eutectic solvent are clarified.Finally,the application of deep eutectic solvent in oil and fat modification is summarized and prospected,especially focuses on the production of biodiesel in deep eutectic solvent,extraction of reaction by-product through deep eutectic solvent,improvement of lipase activity and selectivity as well as the reaction yield through deep eutectic solvent.This review would provide theoretical reference for the future application of deep eutectic solvent in oil and fat modification.
