摘 要:目的:了解我国城市人群乳制品摄入状况,并探讨人口统计、生活方式、乳制品知识等影响因素。方法:对中国8个城市人群进行抽样,采用膳食频率调查问卷调查各类乳制品摄入量,分析乳制品摄入状况及其影响因素。结果:中国8个城市人群的乳制品摄入量为111.39 g/d,摄入频率为71.3%;纯牛奶的摄入占比为60.39%,为乳制品的重要组成部分,酸奶摄入占比为28.24%、奶酪占比2%、奶粉占比4.28%。单因素分析显示,乳制品摄入量与性别、年龄、地区、教育水平、家庭食物消费、吸烟、收入状况、BMI以及乳制品知识得分有关,多因素分析表明乳制品摄入量与性别、年龄、地区、教育水平、家庭食物消费以及乳制品知识得分有关。结论:我国8个城市人群乳制品摄入总体较低,乳制品构成相比国外相差较大。乳制品摄入与性别、年龄、地区、教育水平、家庭食物消费、乳制品知识得分等多种因素相关。Objective To understand the intake status of dairy products in urban population in China,and discuss the related influencing factors including demographics,lifestyle,dairy product knowledge.Method Samples were taken from populations in 8 cities in China.The intake of various dairy products were investigated by using the dietary frequency questionnaire.The intake status and influencing factors of dairy products were analyzed.Result The intake of dairy products of people in 8 cities in China was 111.39 g/d,and the frequency of consumption was 71.3%.The proportion of pure milk was 60.39%,which was an important part of dairy products,and the proportion of yogurt accounts was 28.24%,the proportion of cheese was 2%,milk powder was 4.28%.Univariate analysis showed that dairy product intake was related to gender,age,region,education level,household food consumption,smoking,income status,BMI and dairy product knowledge score.Multivariate analysis showed that dairy product intake was related to gender,age,region,education level,household food consumption and dairy product knowledge.Conclusion The intake of dairy products in 8 cities in China is relatively low,and the composition of dairy products is quite different from that of foreign countries.Dairy product intake is related to various factors such as gender,age,region,education level,household food consumption,and dairy product knowledge score.
