摘 要:近年来,绿色理念成为一种重要的发展趋势,“十四五”提出要发展传统产业智能绿色制造,使中国迈向高质量发展阶段。食品工业的绿色发展要以工厂为载体,设计绿色工厂对促进食品工业的转型升级产业和可持续发展发挥着重要作用。以某红枣深加工项目为例,立足绿色发展的设计理念,将食品工程绿色设计贯穿整个项目全过程。项目从节地、节能、节水、污染物控制、职业安全健康等方面重点考虑并开展了设计工作,同时落实到工艺路线及公用工程等方案的制定,强化了资源的循环利用,提高了资源综合利用的水平,并为促进地方食品产业的转型升级做出积极贡献。In recent years,the green concept has become an important development trend.The“14th Five-year Plan”proposes to develop smart and green manufacturing in traditional industries,to bring china to a high-quality development stage.The green development of the food industry must take the factory as the carrier.The green design of food factories also plays an important role in promoting the transformation,upgrading and sustainable development of the food industry.This article tood a red jujube deep processing project as an example,summarized some problems existing in the development of the food industry,based on the design concept of green development,and integrated the“green design”of food engineering throughout the entire project.The project was key considered from land saving,energy saving,water saving,pollutant control,occupational safety,health,etc.,and carried out the design work.At the same time,implemented in the formulation of process routes and utility engineering plan,which strengthened the recycling of resources,improved the comprehensiveness of resources,and made positive contributions to the transformation and upgrading of local food industry.
