摘 要:为研究不同栽培模式对红托竹荪菌托营养成分的影响,本实验比较了红托竹荪在林下和大棚两种栽培模式下,其菌托3个部位(菌皮、胶质和连接膜)的蛋白质、多糖、多酚、黄酮和氨基酸含量的差异。结果表明:红托竹荪菌托3个部位都含有蛋白质、多糖、多酚、黄酮和氨基酸;大棚菌皮的蛋白质含量(22.516 g/100 g)和连接膜的蛋白质含量(22.708 g/100 g)显著高于林下菌皮和连接膜的(分别为19.995 g/100 g和19.861 g/100 g),总氨基酸和必需氨基酸含量高于林下;而林下菌皮和连接膜的多糖、多酚和黄酮含量则明显高于大棚菌皮和连接膜的。两种栽培模式下,菌皮和连接膜均测出15种氨基酸,且都含有苏氨酸、缬氨酸、苯丙氨酸、赖氨酸、异亮氨酸、亮氨酸6种必需氨基酸。可见废弃菌托含有丰富的营养元素,且不同栽培方式下的营养成分不同,可根据其优势成分进行开发应用。In order to study the effects of different cultivation modes on the nutritional components of Dictyophora rubrovolvata tray,the contents of protein,polysaccharide,polyphenols,flavonoids and amino acids in the three parts of Dictyophora rubrovolvata tray(bacterial skin,colloid and connecting membrane)were compared under the two cultivation modes of forest and greenhouse.The results showed that the three parts of Dictyophora rubrovolvata tray contained protein,polysaccharide,polyphenols,flavonoids and amino acids.The protein content of plastic greenhouse fungus skin(22.516 g/100 g)and connecting membrane(22.708 g/100 g)was significantly higher than that of understory fungus skin(19.995 g/100 g)and connecting membrane(19.861 g/100 g),and the contents of total amino acids and essential amino acids were higher than that of understory.The contents of polysaccharides,polyphenols and flavonoids in understory fungus skin and connecting membrane were significantly higher than those in greenhouse fungus skin and connecting membrane.15 amino acids were measured in both fungus skin and connecting membrane,and they all contained 6 essential amino acids:threonine,valine,phenylalanine,lysine,isoleucine and leucine.It could be seen that the waste bacterial tray was rich in nutritional elements,and its advantageous nutritional components were different in different cultivation methods.It could be developed and applied according to its advantageous main nutritional components.
