摘  要:通过走访深圳主要农贸市场和各大超市,共采集常见食物(如谷物及其制品,薯类,蔬菜,肉类,水产品等)共296批次,按照GB5009.268-2016《食品安全国家标准食品中多元素的测定》第二法,对样品中的钙、磷含量进行测定并计算钙磷比值,钙磷比值高低水平为藻类>蔬菜>乳及乳制品>豆及豆制品>薯类>水产品>食用菌>蛋及蛋制品>肉类>坚果类>谷物及其制品。结合深圳居民每日膳食摄入量,评估深圳市居民钙磷的摄入量比值。结果显示,深圳市居民钙、磷摄入的主要来源为蔬菜和谷物及其制品,钙、磷的日均摄入量为397 mg和763 mg,是《中国居民膳食营养素参考摄入量》(2013版)中推荐摄入量(RNI)的50%和106%;钙磷比值为0.52,低于1~1.5的推荐范围,建议深圳居民提高膳食中钙的摄入水平。In this study,Totally 296 food samples were purchased from major farmers market and major supermarkets in Shenzhen,the concentration of calcium and phosphorus ratio was detected by the second method of GB 5009.268-2016.Among all kinds of food investigated,the calcium and phosphorus ratio content followed the decreased order of algae>vegetables>milk and dairy products>beans and its products>potato>aquatic products>edible fungus>eggs and their products>meat>nuts>grain and its products.The dietary calcium and phosphorus ratio intake of inhabitant in Shenzhen was estimated combined with the date from the survey of the nutrition in the inhabitant.Results show that the major origins of dietary calcium and phosphorus intake were vegetable and grain and its products.Daily dietary calcium and phosphorus intake of inhabitant in Shenzhen was 397 mg and 763 mg,accounted for 50% and 106% of RNI according to the DRIs(Chinese Dietary Guide,2013).The calcium and phosphorus ratio was 0.52,below the recommended range of 1~1.5.Shenzhen residents are advised to increase calcium consumption of food intake.
