摘  要:果胶酶(pectinase)是世界四大酶制剂之一,能降解植物细胞中间的果胶质。果胶酶目前广泛应用于食品加工业、饲料加工、造纸、环境保护、诱导植物抗病等方面。本研究以苹果渣和棉粕作为碳源和氮源,黑曲霉为发酵菌种,采用单因素试验以及正交实验进行苹果渣和棉粕发酵产生果胶酶,采用碘量法测定果胶酶活性,结果表明在发酵培养基中硫酸铵添加量为0.7%、水量为90mL、装料量比为3︰7时,测得的酶活力最高达19.57 U/mL。该方法可为苹果渣及棉粕的资源利用开辟新的途径。Pectinase is one of the four enzymes in the world,which can degrade pectin in plant cells.Pectinase is widely used in food processing industry,feed processing,paper making,environmental protection,inducing plant disease resistance and so on.In this study,the apple residue and cotton pulp as carbon source and nitrogen source,Aspergillus Niger strains for fermentation,using single factor experiment and orthogonal experiment to apple residue and cotton pulp fermentation to produce pectinase,pectic enzyme activity was evaluated by iodine volume method,the results show that ammonium sulfate in the fermentation medium adding amount was 0.7%,90 mL water,charge ratio of 3︰7,The highest enzyme activity was 19.57 U/mL.This method can open up a new way for the utilization of apple dreg and cottonseed meal.
