摘 要:少根根霉(Rhizopus arrhizus)是一种在自然界中较为常见、无横隔的丝状真菌,也是发酵生产中的一种常用微生物。少根根霉具有较强的产有机酸和产酶能力,在不同的工艺条件下,其主要发酵产物不同。少根根霉除产物可广泛应用于食品、药品及化工等多个领域外,其菌丝体还可作为介质用于吸附废水中的有害离子,以及作为酶的固定化载体等。本文介绍了在不同的发酵工艺条件下少根根霉发酵生产富马酸以及脂肪酶的研究进展,简要介绍了少根根霉产淀粉酶、纤溶酶以及乙醇的相关研究内容,并对少根根霉发酵过程中的相关问题提出了意见和建议,最后简述了少根根霉菌丝体在环境保护方面的应用价值并对少根根霉发酵生产的进一步研究进行了展望。Rhizopus arrhizus is a filamentous fungus relatively common in nature and has no diaphragm.It is also a commonly used microorganism in fermentation production.Rhizopus arrhizus has a strong ability to produce organic acids and enzymes,depending on different process conditions.In addition to products that can be widely used in many fields such as food,medicine and chemical industry,Rhizopus arrhizus mycelium can also be used as a medium to adsorb toxic ions in wastewater,and as an enzyme immobilization carrier.We introduce the research progress of Rhizopus arrhizus fermentative production of fumaric acid and lipase under different fermentation conditions,the related research content of Rhizopus arrhizus producing amylase,fibrinolytic enzyme and ethanol,and suggestions to solve related problems in the fermentation process of Rhizopus arrhizus.Finally,the application of the mycelium of Rhizopus arrhizus in environmental protection is briefly described and the further research on the fermentation production of Rhizopus arrhizus is prospected.
