摘  要:本研究利用分光测色仪可测定浊液中色度变化的特征,以酒石酸亚铁溶液作为显色剂,在一定温度条件下对未经蛋白沉淀的奶茶进行茶多酚含量测定,并探究了奶茶稀释倍数、显色剂添加量、显色时间以及显色温度对测定结果的影响,建立利用分光测色仪测定奶茶等茶饮料中茶多酚含量的分析方法。结果表明,奶茶稀释倍数为2倍、酒石酸亚铁溶液添加量为10 mL、显色温度为25±1℃、显色时间为20 min时检测结果最佳。将该方法用于奶茶等茶饮料中茶多酚含量的测定,茶多酚在0.1~0.9 mg线性范围良好,所得标准曲线线性相关系数均在0.9815以上,样品的加标回收率为98.2%~107.9%,相对标准偏差(RSD)1.7%~6.1%(n=6)。本研究所建立的方法具有精密度、准确度均较高等特点,适用于测定奶茶等茶饮料中茶多酚的含量。In this study,the quantitative analysis of tea polyphenols in milk tea was applied by using ferrous tartrate as chromogenic agent without protein precipitation process to establish a method for the quantitative analysis of tea polyphenols in milk tea by colorimeter,according to portable colorimeter can be used to determine the characteristics of color change in turbidity.The effects of dilution times of milk tea,ferrous tartrate dosage,chromogenic time and chromogenic temperature on tea polyphenols quantitative analysis were investigated in the study.The results showed that the recovery of tea polyphenols standard and relative standard deviation of the optimal method was measured.The optimal conditions for tea polyphenols quantitative analysis in milk tea were as follows:milk tea dilution times of 2,ferrous tartrate dosage of 10 mL,temperature of 25±1℃and reaction time of 20 min.A good linear relationship between tea polyphenols concentration and colorimetric value is observed in the range of 0.1-0.9 mg with correlation coefficients greater than or equal to 0.9815.The recovery of tea polyphenosl standard was 98.2%~107.9%,with relative standard deviation(RSD)of 1.7%~6.1%(n=6).This method was sensitive,accurate and suitable for the tea polyphenols quantitative analysis in milk tea.
