白芍可溶性膳食纤维研究及其在再造烟叶中的应用

摘  要:对白芍可溶性膳食纤维(Paeonia lactiflora Pall soluble dietary fibers, PSDF)的热力学特征、形态特征进行比较研究,同时将PSDF添加到烟烟末中制成再造烟叶,研究PSDF对再造烟叶品质特征和风格特征的影响,为提高再造烟叶品质和丰富风格提供理论和实践依据。研究发现,白芍茎可溶性膳食纤维(Paeonia lactiflora Pall stem soluble dietary fibers, PSSDF)具有最高的毒性离子吸附能力(Pb 1.25 mg/g;As 3.37 mg/g)和胆汁酸盐吸附能力(胆酸钠86.1 mg/g、糖胆酸钠93.8 mg/g、牛磺胆酸钠126.2 mg/g)。白芍根可溶性膳食纤维(Paeonia lactiflora Pall root soluble dietary fibers, PRSDF)和茎可溶性膳食纤维(Paeonia lactiflora Pall stem soluble dietary fibers, PSSDF)具有相似的热学性能、化学键和微观特性;PSSDF再造烟叶抗张指数和松厚度等物理性能较好,且能赋予再造烟叶特殊香韵,柔和细腻烟气,降低刺激,降低烟气粗糙感。The thermodynamic and morphological characteristics of soluble dietary fibers(PSDF) of Paeonia lactiflora Pall were compared. At the same time, PSDF was added to the tobacco powder to make reconstituted tobaccos, and the effect of PSDF on the quality and style characteristics of tobacco slices was studied, so as to provide theoretical and practical basis for improving the quality and enriching the style of reconstituted tobaccos. It was found that stem SDF(Paeonia lactiflora Pall stem soluble dietary fibers, PSSDF) had the highest adsorption capacity for toxic ions(Pb 1.25 mg/g;As 3.37 mg/g) and bile acid salt adsorption capacity(sodium cholate 86.1 mg/g, sodium glycocholate 93.8 mg/g, sodium taurocholate 126.2 mg/g). It was found that root soluble dietary fibers(PRSDF) and stem soluble dietary fibers(PSSDF) of Paeonia lactiflora Pall had similar thermal properties, chemical bonds and microscopic characteristics. The obtained SDF, especially PRSDF and PSSDF, could be used as functional components rich in fiber in food industry. PSDF reconstituted tobacco had better physical properties such as tensile index and loose thickness, and could give reconstituted tobaccos special aroma, soften and delicate smoke, reduce irritation and roughness.
