复配酶制剂提高糖汁纯度的应用研究

摘　　要：解决云南省某糖厂由于蔗汁纯度低给生产造成的不良影响。检测混合汁和糖浆中主要非糖分的含量,确定造成蔗汁纯度低的非糖分种类。通过生物酶降解非糖分,提高蔗汁或糖浆纯度,并优化生物酶的添加点和添加量。蔗汁和糖浆中纤维素、α-葡聚糖、木聚糖、果胶含量较高,是导致物料纯度低的主要原因。现有制糖清净工艺对这4种非糖分的去除率仅为18.71%~35.90%。复配酶制剂的最佳添加点为粗糖浆,添加量为150 mg/L。纤维素、α-葡聚糖、木聚糖、果胶去除率分别达到81.03%、85.87%、79.38%、81.35%,精糖浆与粗糖浆重力纯度差提高0.31%。复配酶制剂在生产线上连续应用30天,甲膏纯度提高0.37%(绝对值),结晶率提高1.24%(绝对值),产糖率提高0.24%(绝对值),废蜜产率降低0.45%(绝对值)。应用复配酶制剂可有效降解非糖分,提高精糖浆纯度,提高糖厂效益。To solve the negative effect caused by low purity of sugarcane juice in Yunnan a sugar factory.The main non-sucrose in mixed juice and syrup were detected to determine which non-sucrose causing low purity of sugarcane juice.The non-sucrose were degraded by enzyme to improve the purity of sugarcane juice or syrup,and the addition point and amount of enzyme were optimized.The high content of cellulose,dextran,xylan and pectin in sugarcane juice and syrup was the main reason for the low purity of materials.The removal rate of these four non-sucrose by the existing sugar purification process were only 18.71%~35.90%.The best addition point of compound enzyme was in syrup,and the addition amount was 150 mg/L.The removal rate of cellulose,dextran,xylan and pectin were 81.03%,85.87%,79.38%and 81.35%respectively,and the gravity purity of syrup was increased by 0.31%.When the compound enzyme was continuously applied in the production line for 30 days,the purity of massecuite A was increased by 0.37%(absolute value),the crystal yield was increased by 1.24%(absolute value),the sugar yield rate was increased by 0.24%(absolute value),and the yield of final molasses was reduced by 0.45%(absolute value).The application of compound enzyme could effectively degrade non-sucrose,improve the purity of syrup and improve the benefit of sugar factory.
