摘  要:为探究外源硅素叶面喷施对葡萄果实品质的影响,以‘红地球’葡萄为试材,测定了不同剂量硅处理的果实理化指标,并采用气相离子迁移谱技术检测了果实挥发性组分。结果表明:‘红地球’葡萄果实的总糖、总酸、Vc、可溶性固形物均受到硅素的影响;各处理共检测出挥发性物质32种,但风味物质丰富度不同;在喷施600倍硅素时葡萄的挥发性组分显著提高,其中酯类挥发性物质受影响最大,其次是醇类、醛类和杂环类。根据峰体积与对照相比:乙酸乙酯增加2873%、丙酸乙酯增加454%、乙酸异戊酯增加352%、3-甲基-3-丁烯-1-醇增加了327%,表明600倍硅素叶喷处理更有利于‘红地球’葡萄风味的改善。研究结果可为‘红地球’葡萄的品质定向调优提供参考。In order to explore the effect of exogenous silicon foliar spraying on grape quality,'Red Globe'grape was used as the material,physicochemical indexes with different doses of silicon treatment were determined,and the volatile components were detected by gas phase ion mobility spectroscopy.The results showed that the total sugar,total acid,Vc,and soluble solids of'Red Globe'fruit were all affected by the foliar application of silicon;32 kinds of volatile substances were detected in different treatments,and the richness of flavor substances was different;When 600 times silican was used,the volatile components of grapes were significantly increased.Among them,ester volatile substances were the most affected,followed by alcohols,aldehydes and heterocyclics.According to the peak volume change compared with the control:ethyl acetate increased by 2873%,ethyl propionate increased by 454%,isoamyl acetate increased by 352%,3-methyl-3-buten-1-ol increased by 327%,it was shown that 600 times silicon treatment was more conducive to the improvement of'Red Globe'grape flavor.This results provide a basis for the quality-oriented optimization of'Red Globe'grapes.
