摘　　要：苋属植物(Amaranthus)是一种古老多种用途的一年生草本植物,具有营养丰富、适口性较好、产量高、耐旱、耐贫瘠和抗逆性强等优点。它富含蛋白质、赖氨酸、蛋氨酸、脂肪和酚类化合物,在促生长、抗氧化和改善健康等方面具有极大的饲用价值,开发潜力巨大、应用前景广阔。本文总结了苋属植物籽粒和株叶的营养价值、次级代谢产物、调制加工方式及其在动物生产中的应用,以期为合理开发优质苋属类饲料资源提供科学依据和生产技术指导。Amaranthus is an ancient annual herbaceous plant with multiple uses.It has the advantages of rich nutrition,good palatability,high yield,drought tolerance,barren tolerance and strong stress resistance.Moreover,it is rich in protein,lysine,methionine,fat and phenolic compounds.It has great feed values in growth promotion,anti-oxidation and health improvement,and has huge development potential and broad application prospects.This article summarized the nutritional value,secondary metabolites,preparation and processing methods of plant leaves and grains of Amaranthus,and its application in animal production,in order to provide scientific basis and production technology guidance for the rational development of high-quality Amaranthus feed resources.
