摘  要:本文建立了气相色谱-三重四极杆质谱测定生湿面制品中单辛酸甘油酯的方法,选用乙腈+水(1+1,v/v)提取样品中单辛酸甘油酯,以气相色谱-三重四级杆质谱(GC-MS/MS)多反应监测模式(MRM)检测。结果表明:本方法线性范围为0.1~10.0μg/mL,检出限为25μg/kg,添加回收率范围为80.5%~108.2%,相对标准偏差(RSD)范围为3.3%~7.8%。该方法的准确性高、重复性好、操作简便,适用于生湿面制品中单辛酸甘油酯的测定。A gas chromatography-triple quadrupole mass spectrometry method for the determination of monooctanoin in fresh wet flour product has been established.The monooctanoin was extracted by mixed solvent of acetonitrile-water(1+1,v/v)and detected by GC-MS/MS with multiple reaction monitoring mode(MRM),external standard method for quantitative.The results showed that the linear relationship was good in the range of 0.1~10.0μg/mL.The limit of quantification was 25μg/kg,the average recovery rates of monooctanoin were 80.5%~108.2%with relative standard deviation(RSD)3.3%%~7.8%.The method is accuracy and repeatable,with high sensitivity,simple operation,and suitable for the determination of monooctanoin in fresh wet flour product.
