摘 要:为研究蓝莓采后冷藏期间果实品质、营养物质、抗氧化酶活力变化情况,以北陆、莱格西两个蓝莓品种为试材,比较两个品种果实冷藏期间果实外观品质、营养成分含量、抗氧化酶活力的变化。结果表明:莱格西蓝莓冷藏期间失重率、腐烂率低,果实硬度、可溶性固形物、可滴定酸、花青素含量高。北陆蓝莓则具有较高的维生素C、总酚、类黄酮含量和过氧化物酶、超氧化物歧化酶活性。综合各项指标,莱格西蓝莓贮藏性好于北陆蓝莓。To study the changes in fruit quality,nutrients and antioxidant enzyme activities during cold storage of blueberries,Northland and Legacy were used as test materials.The fruit appearance quality,nutrient content and antioxidant enzyme activity of the two varieties were compared during cold storage.The results showed that Legacy blueberries had low weight loss and decay rate and had high fruit hardness,total soluble solids,titratable acid and anthocyanin content during cold storage.By contrast,Northland blueberries had high vitamin C,total phenol and flavonoid contents and peroxidase and superoxide dismutase activities during cold storage.In conclusion,Legacy blueberries had better storability than Northland blueberries.
