摘  要:目的了解在青岛市黄岛区4个家庭中发生相似食物中毒事件的原因,为防止此类事故发生提供借鉴。方法使用描述性流行病学、血清凝集滴度实验等方法,对16例食物中毒患者开展病例个案调查;对烤鸡架加工点和代售店开展现场卫生学调查及标本采集和检测,根据此事件致病菌调查结果分析其预防策略。结果 2020年10月23日黄岛区4个家庭中发生相似食物中毒事件,涉及午餐和晚餐、16例食物中毒患者。患者临床症状主要为腹痛、腹泻、恶心、呕吐,并伴有发热、头痛头晕等症状;采集8名患者肛拭子,烤鸡架加工点器具涂抹样品9份,烤鸡架代售店保温箱涂抹样品4份,剩余烤鸡架样品5份,其中有2份样品仅检出了副溶血性弧菌,有6份样品仅检出了奇异变形杆菌,有7份样品同时检出副溶血性弧菌与奇异变形杆菌。结论该食物中毒事件中的主要致病菌为副溶血性弧菌与奇异变形杆菌。此事件的发生与食品的加工、存放、销售环境等存在一定联系。Objective To understand the causes of similar food poisoning incidents occurred in 4 families in Huangdao district, Qingdao city, so as to offer a reference for the prevention of repeated incidents. Methods A case-by-case study was conducted in 16 patients with food poisoning using descriptive epidemiology and serum agglutination titer test.On-site hygienic investigation, specimen collection and detection were conducted in roast chicken rack processing stations and consignment shops, and the prevention strategies were analyzed based on the investigation results of pathogenic bacteria of the incident. Results A similar food poisoning incident was reported in 4 families in Huangdao district on October 23,2020,involving lunch and dinner, and 16 cases of food poisoning.Their clinical symptoms mainly included abdominal pain, diarrhea, nausea, and vomiting, accompanied by fever, headache and dizziness.Anal swabs were collected from 8 patients, 9 samples of appliance smear were obtained from the processing factory of grilled chicken rack, 4 samples of incubator were obtained from the grilled chicken rack dealer store, and 5 samples of the remaining grilled chicken rack.Vibrio parahaemolyticus was detected in only 2 of the samples, Proteus mirabilis was detected in only 6 of the samples, and both Vibrio parahaemolyticus and Proteus mirabilis were detected in 7 samples. Conclusion The primary pathogens in the food poisoning incident are identified as Vibrio parahaemolyticus and Proteus mirabilis.The occurrence of the incident is related to the food processing, storage and sales environment.
