摘 要:单硬脂酸甘油酯(glycerol monostearate,MG)是一种重要的多元醇型非离子表面活性剂。酶催化合成单硬脂酸甘油酯反应条件温和,可有效地降低能耗,减少副产物的产生,提高单甘酯的收率和质量。本文主要研究了以氢化油和甘油为原料,以固定化脂肪酶为催化剂在无溶剂体系中采用甘油解法,合成单硬脂酸甘油酯时主要影响因素:脂肪酶选择、物料摩尔比、脂肪酶添加量、反应温度及反应时间,对反应转化率的影响。通过研究,得出合成单硬脂酸甘油酯时,最佳合成条件及粗酯中单硬脂酸甘油酯的含量。Glycerol monostearate(MG)is an important non-ionic polyol surfactant.The synthesis of glyceryl monostearate catalyzed by enzyme under mild reaction conditions can effectively reduce energy consumption,reduce the generation of by-products,and improve the yield and quality of monostearate.In this paper,the synthesis of monostearate glyceride by glycerolysis with hydrogenated oil and glycerol as raw materials and immobilized lipase as catalyst in solvent-free system was studied.The main influencing factors were:lipase selection,material molar ratio,lipase addition,reaction temperature and reaction time.The optimum synthesis conditions and the content of glycerol monostearate in crude ester were obtained.
