不同品种双低甘蓝型油菜菜薹营养品质分析与评价

摘　　要：为明确不同品种油菜菜薹的营养品质特点,对同等栽培条件下的3个双低甘蓝型油菜品种(系)的菜薹营养品质进行分析,并与十字花科蔬菜白菜薹进行了比较。结果表明,维生素B_(1)、维生素B_(2)、维生素C、蛋白质、可溶性糖、粗纤维、钙、铁、锌9个油菜薹品质指标存在品种间差异。维生素B_(2)、可溶性糖、锌、钙含量的变异系数大于10.000%,品种间差异较大;维生素C、维生素B_(1)、蛋白质、粗纤维、铁含量的变异系数小于10.000%,品种间差异较小,是相对稳定的指标。锌与维生素C、蛋白质含量之间呈极显著正相关,相关系数分别为0.8578、0.8664;蛋白质含量与维生素B_(1)含量、维生素B_(2)含量之间呈极显著正相关,相关系数分别为0.8653、0.8387;钙含量与测定的其他营养品质指标之间均呈负相关,但未达到显著水平。与白菜薹相比,双低甘蓝型油菜菜薹中的营养成分含量综合表现较佳,其中维生素C含量、锌含量均是白菜薹的1.7倍以上,铁含量是白菜薹的1.3倍以上,表明双低甘蓝型油菜菜薹营养更为丰富,具有较高的食用价值。In order to clarify the nutritional quality characteristics of flower stalk of different rapeseedvarieties(Brassica napus L.),the nutritional quality of three double-low rapeseedvarieties is analyzed,and compared with that of a cruciferous vegetable Chinese cabba⁃geunder the same cultivation conditions.Theresearch shows that three double-low rapeseedvarieties are different in nine quality indica⁃tors,i.e.,vitamin B1,vitamin B2,vitamin C,protein,soluble sugar,crude fiber,calcium,iron and zinc.Specifically speaking,the coefficients of variation for content of vitamin B2,soluble sugar,zinc and calcium are greater than 10.000%,indicating that a big dif⁃ference betweenthese varieties,while the coefficients of variation for content of vitamin C,vitamin B1,protein,crude fiber and iron are less than 10.000%,suggesting a small difference betweenthese varieties.There is an extremelysignificant positive correlation be⁃tween zinc andvitamin C as well as zinc and protein content,with the correlation coefficients 0.8578 and 0.8664,respectively.The protein content is extremelysignificant positively correlated with vitamin B1 content and vitamin B2 content,with the respective correla⁃tion coefficients 0.8653 and 0.8387.Calcium content is negatively correlated with other nutritional quality indexes,without reaching a significant level.Compared with the Chinese cabbage,the comprehensive nutritional components of flower stalk in the double-low rapeseed are higher,wherein the vitamin C content and zinc content are more than 1.7 times of those in the Chinese cabbage,the iron content is more than 1.3 times of that in the Chinese cabbage.These suggest that flower stalk of the double-low rapeseed hasricher nu⁃trition and higher edible value than the Chinese cabbage.
