摘 要:以紫娟为代表的紫色芽叶品种,由于其高花青素含量所具有的抗氧化、消炎、预防心血管疾病、抗癌等独特的保健功效,使其具有更加独特的开发特色以及健康茶产品的发展前景。文章分别从花青素合成途径与调控因素、特异性紫色芽叶茶树种质资源创新利用、紫色芽叶茶树品种的生理特性、紫色芽叶茶加工工艺等4个方面就当前紫色芽叶茶树品种研究、开发、利用进展进行总结,并对后期研究发展进行了展望。The purple bud-leaf tea cultivars represented by Zijuan have high levels of anthocyanins,which benefit human health such as lowering blood lipids,pressure and against cancer.Therefore,they have more unique economic potential as healthy tea products.This article focused on the current development of purple bud-leaf tea cultivars from four aspects:biosynthesis pathway and the internal and external factors affecting the biosynthesis of anthocyanins;innovative utilization of specific purple bud-leaf tea germplasm resources;the physiological characteristics of purple bud-leaf tea cultivars;and the processing technology of purple bud-leaf tea.In this review,the current research progress,devel-opment and utilization of purple bud-leaf tea were summarized,and the future research and development were prospected.
