摘 要:我国经济正处于快速发展中,食品安全问题也越来越受到人们的关注,许多食品安全问题的根源都是出现在微生物病变体方面,因此,对于微生物的检测技术的要求也极为严格,餐(饮)具的消毒效果对灭活大肠菌群有着直接影响,进而保证人们的饮食健康安全,这也变成社会关注的重点内容。如何采用快速、准确的微生物检验方法,制定安全而可靠的食品检验标准是保障饮食安全的重要手段。食品微生物检测的方法有很多种,本文采用快速纸片法对大肠菌群进行检测,并使用常规发酵法作为对照组,并对两种检测方法的符合率、结果等进行对照,结果显示,快速纸片法总符合率达95.78%,可以作为常规发酵法代替检测方法,对餐(饮)具消毒效果进行有效检测。My country’s economy is undergoing rapid development,and food safety issues have attracted more and more attention. Many food safety issues are rooted in microbial disease. Therefore,the requirements for microbial detection technology are also extremely strict. The disinfection effect of food(drinking) utensils has a direct impact on the inactivation of coliforms,thereby ensuring the health and safety of people’s diet,which has become a key content of social concern. How to adopt fast and accurate microbiological inspection methods and formulate safe and reliable food inspection standards is an important means to ensure food safety. There are many ways to detect food microorganisms. This article uses the rapid paper method to detect the coliform bacteria,and uses the conventional fermentation method as a control group. The coincidence rate and results of the two detection methods are compared.The results show that the rapid The paper method has a total compliance rate of 95.78%,which can be used as a substitute for the conventional fermentation method to detect the disinfection effect of food(drinking) utensils.
