摘 要:元代葡萄加工产品丰富,有红葡萄酒、桃红葡萄酒、白葡萄酒、葡萄蒸馏酒等多种葡萄酒,酒之外还有葡萄干、葡萄浆(汁)、舍利别等,元代葡萄舍利别、蒸馏酒名称多样。葡萄加工技术又以舍利别和葡萄蒸馏酒工艺引人注目,葡萄酒有葡萄自然发酵酿酒法、葡萄加曲发酵酿酒法、葡萄蒸馏酒技术等多种酿造技术,其中葡萄蒸馏酒工艺包括分离蒸馏、提纯蒸馏。元代出土文书、文物、碑刻等都揭示出元代葡萄加工方面的进步,源自唐代西域高昌的葡萄蒸馏酒技术的蒸馏酒工艺得到普遍推广。The Yuan Dynasty grape processing product is rich,including the red wine,the Rose,the white wine,the grape distilled wine,many kinds of wines,etc.,besides the wine also has the raisin,the grape pulp(juice),and so on,the names of grape sariputra and distilled wine in Yuan Dynasty are various.Grape processing technology is also notable for the techniques of Sariputra and grape distilled wine,such as grape natural fermentation,grape starter fermentation,grape distilled wine,etc.,the grape distilled wine technology includes separation distillation and purification distillation.Documents,cultural relics and inscriptions unearthed in the Yuan dynasty revealing the progress of grape processing in the Yuan dynasty,and the technique of grape distilled wine,which originated from the western region of Gaochang in Tang Dynasty,has been widely popularized.
