摘 要:目的了解市售酒类中氨基甲酸乙酯的污染状况,分析白酒中氨基甲酸乙酯的膳食暴露风险,并对居民提出不同酒类消费量建议。方法随机采集白酒、黄酒、葡萄酒294份,采用同位素稀释-气相色谱-质谱联用法测定酒类中氨基甲酸乙酯含量,结合居民酒精饮料消费量,对市售白酒中氨基甲酸乙酯的暴露量及存在的健康风险进行评估。并假设能够引起公共卫生高关注度(既MOE=10000)的氨基甲酸乙酯暴露临界状态下,对居民酒类消费量提出指导。结果本次采集的不同酒类共294份,总检出率为79.59%。白酒、黄酒、葡萄酒中氨基甲酸乙酯平均含量分别为0.078 mg/kg、0.069 mg/kg、0.021 mg/kg。黄酒中氨基甲酸乙酯平均含量最高,白酒中氨基甲酸乙酯最大值为0.48 mg/kg。省居民市售白酒的氨基甲酸乙酯平均暴露水平为0.000898μg/kg BW,MOE=333930,具有较低公共卫生关注度。不同体重人群白酒每周最大建议消费量均低于黄酒、葡萄酒。结论居民市售白酒氨基甲酸乙酯暴露健康风险较低,对市售白酒、黄酒、葡萄酒给出最大消费量供居民参考。Objective To understand the pollution status of ethyl carbamate in wines sold and to analyze the dietary exposure risk of ethyl carbamate in white wine,and to propose different consumption of alcohol for residents.Methods 294 samples of white wine,yellow wine and red wine were randomly collected from various cities,The content of ethyl carbamate in different wines was determined by isotope dilution-gas chromatography mass spectrometry.The exposure amount and the health risk of ethyl carbamate in the liquor were evaluated by the consumption of alcoholic beverages.In addition,it was assumed that under the critical condition of ethyl carbamate exposure that could cause high public health attention(MOE=10000),it would provide guidance for the alcohol consumption of residents.Results A total of 294 different wines were collected,and the total detection rate was 79.59%.The average content of ethyl carbamate in white wine,yellow rice wine and red wine were 0.078 mg/kg,0.069 mg/kg,and 0.021 mg/kg,respectively.The average content of ethyl carbamate detected in yellow rice wine was the highest,and the maximum value of ethyl carbamate in white wine was 0.48mg/kg.The average exposure level of ethyl carbamate in white wine was 0.000898μg/kg BW,MOE=333930,with lower public health concern.The maximum recommended weekly consumption of white wine for people of different weights was lower than that of yellow rice wine and red wine.Conclusion The health risks of ethyl carbamate in the white wine are relatively low.The maximum consumption of white wine,yellow rice wine and red wine are given for reference.
