摘  要:通过对‘瑰夏’等4个咖啡新品种的内含物质测定及杯测评分来进行评价,分析咖啡杯测评分与内含物质之间的相关性。研究结果初步表明,咖啡杯测评分与内含物质之间相关性比较复杂,其中β-蒎烯和灰分含量与咖啡杯测评分呈显著正相关。‘瑰夏’等4个品种的杯测得分都在80分以上,可以作为精品咖啡在适宜区域进行推广。In this study,the intrinsic substances and cupping scores of four new coffee varieties including'Geisha',were determined and evaluated,so as to analyze the correlations between the cupping scores and the intrinsic substances.The results of the study preliminarily showed that the correlation between the cupping scores and the intrinsic substances was relatively complicated.Among them,β-pinene and ash content showed a significantly positive correlation with the cupping scores.The cupping scores of all four varieties including'Geisha',were all above 80 points,so they could be promoted as specialty coffee in suitable areas.
