摘 要:为研究勒通绵羊肉品质及营养成分含量,对20只(公、母各10只)12月龄勒通绵羊屠宰后进行肉质性状、常规营养成分、矿物质元素、氨基酸和重金属元素含量的测定。结果表明,勒通绵羊肉品质无显著的性别差异(P>0.05);在常规营养成分中,勒通绵羊公羊肉的灰分含量显著高于母羊肉(P<0.05),而脂肪含量显著低于母羊肉(P<0.05);在矿物质元素中,勒通绵羊公羊肉中钙的含量极显著低于母羊肉(P<0.01),锌含量显著低于母羊肉(P<0.05),而钾和铁的含量均极显著高于母羊肉(P<0.01);在氨基酸测定中,勒通绵羊肉的必需氨基酸含量及其占氨基酸总量的比例没有显著的性别差异(P>0.05);在非必需氨基酸含量中,公羊肉中甘氨酸含量显著高于母羊肉(P<0.05),谷氨酸含量极显著高于母羊肉(P<0.01),组氨酸占氨基酸总量的比例极显著低于母羊肉(P<0.01);在重金属元素检测中,勒通绵羊肉中的铅、镉、铬含量低且无性别差异(P>0.05),未检测到砷、汞、铜和锰等金属残留。综上,勒通绵羊肉是具有蛋白质含量高、脂肪含量低、氨基酸和微量元素含量丰富等特点的安全无污染食品。In order to study the meat quality and nutritional composition of Letong sheep,20 sheep(half male and helf femal)were selected for slaughter.The cooked meat rate,meat tenderness,meat color,conventional nutrients,mineral elements,heavy metal elements and amino acid content were determined.The results showed that there was no significant gender difference in meat quality of Letong sheep(P>0.05);among the conventional nutrients,the ash content of Letong sheep ram meat was significantly higher than that of ewe meat(P<0.05),and the fat content was significantly lower than that of female sheep(P<0.05);among mineral elements,the calcium content in Letong sheep ram meat was extremely significantly lower than that of ewe meat(P<0.01),the zinc content was significantly lower than that of ewe meat(P<0.05),and potassium and iron content was significantly higher than those of ewe meat(P<0.01);in the amino acid determination,there was no significant gender difference in the essential amino acid content and EAA/TAA in Letong sheep meat(P>0.05);in the non-essential amino acid content,the glycine content in ram meat was significantly higher than ewe meat(P<0.05),the glutamate content in ram meat was extremely significantly higher than ewe meat(P<0.01),and the proportion of histidine to total amino acid in ram meat was extremely significantly lower than ewe meat(P<0.01);in the detection of metal elements,the content of lead,cadmium and chromium in Letong sheep meat was low and there was no gender difference(P>0.05),and metal residues such as arsenic,mercury,copper and manganese had not been obtained.In conclusion,Letong sheep meat is a safe,healthy and pollution-free food with high protein content,low fat content and rich amino acid content.
