摘 要:目的通过对我国目前食用黄明胶产品及原料牛皮中的铅含量进行检测,并分析实验数据,提出黄明胶产品和其原料牛皮的铅限量标准建议,为制定实用、风险可控的食品安全标准提供科学的依据。方法采集河南省内的黄明胶生产企业生产的食用黄明胶样品62份,采集河南及河北的黄明胶生产原料牛皮62份,运用电感耦合等离子体质谱法测定其铅含量,结合《食品安全国家标准胶原蛋白肽》(GB 31645)和《食品安全国家标准食品中污染物限量》(GB 2762),提出食用黄明胶产品和其原料牛皮的铅限量值。结果 62份食用黄明胶中铅的均值为(0.560±0.284)mg/kg,原料牛皮中铅的均值为(0.361±0.349)mg/kg。食用黄明胶中的铅来源主要是原料牛皮,其加工工艺对铅有一定的富集作用,二者之间差异有统计学意义(P<0.05)。结论建议在相关标准的制定中,食用黄明胶产品铅限量值定为≤1.0 mg/kg,原料牛皮铅限量值定为≤0.5 mg/kg。Objective Through the detection of lead content in oxhide gelatin and raw material cowhide in China and the analysis of experimental data, the suggested lead limit standard of edible oxhide gelatin products and its raw material cowhide was proposed, so as to provide scientific basis for the establishment of practical and controllable food safety standards.Methods Sixty two samples of oxhide gelatin were collected from oxhide gelatin manufacturers in Henan Province, and another sixty two samples of cowhide were collected from in Henan and Hebei Province. The lead content in these samples was determined by inductively coupled plasma mass spectrometry(ICP-MS), and the data were statistically analyzed. Combined with GB 31645 National Food Safety Standard Collagen Peptideand GB 2762 National Food Safety Standard Limit of Pollutants in Food, the lead limit value of oxhide gelatin and cowhide was proposed.Results The average content of lead in 62 oxhide gelatin samples was(0. 560 ± 0. 284) mg/kg, and the average content of lead in cowhide was(0. 361 ± 0. 349) mg/kg. The main source of lead in oxhide gelatin was cowhide, and the processing technology had a certain enrichment effect on lead, and there was statistical significance on the difference between them(P< 0. 05).Conclusion It is suggested that the lead limit of oxhide gelatin products should be ≤1. 0 mg/kg and that of raw cowhide should be ≤0. 5 mg/kg in the formulation of relevant standards.
