摘  要:采用孔径为8、50 nm及500 nm的陶瓷膜对蔗汁进行过滤澄清生产红糖,解决传统红糖制作利用上浮撇泡方式处理蔗汁清净效果差导致成品糖品质低的问题。对比不同孔径陶瓷膜过滤蔗汁渗透通量大小、清净效果及能耗高低,结合红糖生产工艺需求,得出孔径为50 nm的陶瓷膜最适用于蔗汁过滤澄清生产红糖。在适合的操作条件下,考察孔径为50 nm的陶瓷膜过滤蔗汁长时间运行通量衰减状况及清净效果,结果表明:陶瓷膜过滤蔗汁连续运行36 h平均渗透通量高达203 L/m;·h,蔗汁经陶瓷膜过滤后浊度从3050 NTU下降至0.77 NTU,清净效率高达99.98%,能满足工业化生产需求。此外,膜过滤对蔗汁中蔗糖、还原糖及多酚等有用成分或营养物质截留率较低,表明采用陶瓷膜过滤后的蔗汁来生产红糖不会显著影响成品糖本身功能价值。In order to solve the problem of poor clarification of cane juice in conventional brown sugar (BS) production and improve the quality of BS,the filtration (clarification) of cane juice using ceramic membranes with pore sizes of 8,50 nm and 500 nm for BS production were investigated.By comparing the permeate flux,clarification effect,and energy consumption of different membranes for treating cane juice on the basis of BS production,we concluded that the ceramic membrane with pore size of 50 nm is the most suitable for cane juice clarification to produce BS.Under the suitable operating conditions,the flux decline and clarification effect in ceramic membrane (50 nm) treatment of cane juice were investigated.Results showed that the average flux of ceramic membrane for cane juice filtration reached up to 203 L/m;·h after 36 h continuous operation and the turbidity of cane juice decreased from 3050 NTU to 0.77 NTU (99.98% of clarification efficiency),which could meet the requirement of industrial production.Moreover,the rejection rate of sucrose,reducing sugar,polyphenols and other useful components/nutrients in cane juice by membrane filtration was low,indicating that the functional value of finished BS would not be significantly affected by the ceramic membrane filtration.
