摘 要:随着啤酒行业市场的扩大以及工艺技术的迅速发展,运用新型仪器检测啤酒苦味质分析已较为普遍,且与传统国标检测方法相比具有检测时间短、检测成本低、测试稳定等优势。该研究通过使用EZ7500苦度分析仪,进行与国标法进行对照、精密度以及不同品类啤酒仪表稳定性等实验。结果显示,EZ7500与国标比对两者偏差在±3%以内,不同品类啤酒仪器的重复性保持在±5%以内,故EZ7500苦度分析仪可替代传统国标方法用于啤酒苦度质指标的快速检测。With the expansion of the beer industry market and the rapid development of process technology,it has become common to use new instruments to detect the bitterness of beer.Compared with the traditional national standard detection method,new instruments have unique advantages such as shorter detection time,lower detection costs and test stability・The study was conducted by using the EZ7500 bitterness analyzer to perform experiments on the comparison with the national standard method,precision and stability of the instrument for different beer categories.The results showed that the deviation between EZ7500 and the national standard was within±3%,and the repeatability of the instrument for different beer categories was maintained within±5%.So the EZ7500 bitterness analyzer can replace the traditional national standard method for rapid testing of beer bitterness quality indicators.
