摘  要:应用ward法聚类分析和Fisher判别分析探究烟叶的颜色指标值与醇化过程中烟叶褐变程度以及烟叶颜色指标值与其内在化学成分的关系。结果表明,以ward法聚类分析在14.08处将所有烟叶样品分为3个类别,逐步判别得对分类结果有显著影响的明度(L值)、黄蓝色(b值)、黄度(Y值),建立2个Fisher判别函数,Fisher判别法的结果与感官评价的结果符合率达96.7%;通过相关分析与线性回归分析烟叶的颜色指标值与化学成分存在极显著相关关系,醇化过程中L、Y与类胡萝卜素、总酚、游离氨基酸、还原糖含量存在线性相关关系,L、a、b值与全氮含量存在线性相关关系;总糖含量与Y值、淀粉含量与b值存在线性关系。证实了烟叶醇化过程中通过烟叶颜色指标值判定烟叶褐变程度与化学成分变化的可能性。The color index of tobacco leaves and the browning degree of tobacco leaves and the relationship between leaf color index and its intrinsic chemical composition were explored by ward clustering analysis and Fisher discriminant analysis.The results showed that all the tobacco samples were divided into three categories at 14.08,and the scores of L,b and Y,which had significant influence on the classification result were determined.Two Fisher discriminant functions were established by Fisher discriminant method.The results showed that the Fisher’s discriminant results and sensory evaluation of the results of the coincidence rate reached 96.7%.Through correlation analysis and linear regression analysis,there was extremely significant correlation between the color index values and chemical components of tobacco leaves.In the mellowing process,there was a linear correlation between L,Y and carotenoids,total phenols,free amino acids and reducing sugars;there was a linear correlation between L,a and b values and total nitrogen content.There was a linear relationship between total sugar content and Y value,starch content and b value.It was confirmed that the possibility that degree of browning and the change of chemical composition were determined by the leaf color index.
