摘  要:针对传统油炸锅炸油容易变质、残渣难以排除以及油温过高容易产生有害物质等问题,设计了一款小型水油混合油炸式油炸机,主要进行了油炸机的结构设计、温控系统设计及关键零部件的热-力耦合仿真。采用AT89C51片机实现了对油层进行温度控制,使油温在0~200℃之间按设定温度可调,油层下面的水温保持在55℃以下,避免了油温过高产生有害物质,保证食物更加健康。使用ANAYS Workbench有限元分析单元,在同时设定温度和载荷约束的情况下,对油炸锅和外部框架进行热力耦合分析。通过一组实例试算可知,油炸机有限元模型上的最大受力点位于油炸锅锅体上部,强度足够,两个核心部件的设计满足热力要求。In view of the problems that the frying oil in the traditional fryer is easy to deteriorate,the residue is difficult to eliminate,and the oil temperature is too high,which is easy to produce harmful substances,a small water oil mixed frying machine was designed.The structure design,temperature control system design and thermal mechanical coupling simulation of key parts of the fryer were mainly carried out.The AT89C51 chip machine was used to realize the temperature control of the oil layer,so that the oil temperature can be adjusted between 0~200℃according to the set temperature,and the water temperature under the oil layer was kept below 55℃,so as to avoid harmful substances caused by excessive oil temperature and ensure more healthy food.Using the ANSYS Workbench finite element analysis element,the thermal coupling analysis of the fryer and the external frame was carried out under the condition of setting the temperature and load constraints at the same time.Through a group of examples,it can be seen that the maximum stress point on the finite element model of the fryer was located in the upper part of the fryer body,with sufficient strength,and the design of the two core components meets the thermal requirements.
