摘 要:为改进传统水代法提取效率低的问题,以山桐子果粉为原料,利用酸性浸润干燥(AMCD)辅助水代法提取山桐子果油。以水代温度、水代时间、柠檬酸浓度为试验因素,运用响应面法优化水代法提取山桐子果油工艺,并对其品质进行分析。结果表明:通过扫描电镜观察发现,酸性浸润干燥预处理后果肉细胞结构遭到破坏,易于后期粉碎提高出油率;响应面最优工艺为水代温度40℃、水代时间83.5 min、柠檬酸浓度0.3 mol/L,在此条件下山桐子果油提取率由未处理的(50.12±1.86)%提升到(68.85±0.13)%,制备的山桐子果油符合国家粮食行业标准的质量要求,为山桐子果加工技术提供一定的指导。In order to improve the problem of low efficiency of traditional aqueous extraction,acidic moisture-conditioning plus drying(AMCD)pretreatment was used to extract oil from Idesia polycarpa Maxim.fruit powder.Response surface methodology(RSM)was used to optimize the extraction process of Idesia polycarpa Maxim.fruit oil by aqueous temperature,aqueous time and citric acid concentration as experimental factors,and its quality was analyzed.The results showed that the structure of cells was destroyed after AMCD pretreatment,which was easy to crush and improve the extraction rate.The optimum extraction conditions were as follows:aqueous temperature 40℃,aqueous time 83.5 min,citric acid concentration 0.3 mol/L.Under these conditions,the extraction rate of Idesia polycarpa Maxim.fruit oil increased from(50.12±1.86)% to(68.85±0.13)%,and the prepared Idesia polycarpa Maxim.fruit oil met the quality requirements of national grain industry standard.Therefore,it could provide a promising technology for the extraction of Idesia polycarpa Maxim.oil.
