摘 要:电化学传感器具有成本低、灵敏度高、选择性好、效率高等优势,已被广泛应用于食品分析检测领域,石墨烯比表面积大、电化学窗口宽、电子迁移速率快,已成为构建电化学传感器的理想材料。本文检索了近3年WebofScience英文数据库和中国知网中文数据库发表的有关石墨烯电化学传感器在食品检测中的研究,综述了石墨烯及其衍生物材料的特性和制备方法,分类介绍基于石墨烯材料构建电化学传感器在食品分析检测中的研究进展,在此基础上分别从优化掺杂材料、研究电极材料与被测物作用机制、设计制造电极材料等方面对石墨烯电化学传感器在食品分析检测领域的未来应用进行展望,为石墨烯电化学传感器在食品检测领域中的发展提供参考。Electrochemical sensor has the advantages of low cost,high sensitivity,good selectivity and high efficiency.It has been widely used in the field of food analysis and detection.Graphene has become an ideal material for constructing electrochemical sensor because of its large specific surface area,wide electrochemical window and fast electron migration rate.This paper searched the research on graphene electrochemical sensors in food detection published in Web of Science English database and HowNet Chinese database in recent 3 years,reviewed the characteristics and preparation methods of graphene and its derivatives,and introduced the research progress of electrochemical sensors based on graphene materials in food analysis and detection.On this basis,the future application of graphene electrochemical sensor in the field of food analysis and detection was prospected from the aspects of optimizing doping materials,studying the interaction mechanism between electrode materials and tested objects,designing and manufacturing electrode materials,so as to provide references for the development of graphene electrochemical sensor in the field of food detection.
