摘  要:为了更好的利用石榴皮中的膳食纤维,以膳食纤维得率为指标,在研究液料比、酶添加量、酶解时间、超声时间以及超声温度5个单因素对得率影响的基础上进行了前3个因素的L_(9)(3^(3))的正交试验,优化了超声辅助纤维素酶提取膳食纤维的条件。在料液比为1∶20(m/V)条件下,60℃超声15min,添加1.0%纤维素酶,酶解70min,提取的不溶性(IDF)和总膳食纤维(ZDF)得率分别为46.86%、58.28%。在此优化条件下,提取了33个石榴种质资源果皮中的膳食纤维,其ZDF得率在27.69%~51.08%,其中IDF占ZDF的64.1%~88.4%,不同品种得率不同。以ZDF得率和IDF占比2个主成分评价,得到IDF、SDF和ZDF得率均排在前10位的皖黑1号、岗榴、峄城三白和河阴薄皮4个品种,在今后石榴果皮膳食纤维提取中可加以利用。In order to make better use of dietary fiber in pomegranate peel,the peel dietary fiber yield as indicators,the influences of five factors including liquid-to-material ratio,enzyme addition,enzymatic hydrolysis time,ultrasonic time and ultrasonic temperature on the yield were studied.The orthogonal test of L_(9)(3^(3))with three factors of liquid-to-material ratio,enzyme addition amount,and enzymatic hydrolysis time were carried out,the conditions of ultrasonic-assisted cellulase extraction was optimized.The best extraction conditions were:material-liquid ratio of 1∶20(m/V),ultrasonic 15 min at 60℃,1.0% cellulase,enzymatic hydrolysis 70 min.Under the above conditions,the extracted insoluble(IDF)and total(ZDF)dietary fiber yields are 46.86% and 58.28%,respectively.Under this optimized condition,the dietary fiber from 33 pomegranate peel were extracted.The yield of ZDF was 27.69%~51.08%,among which IDF accounted for 64.1%~88.4%.The yield from different varieties was different.Based on the evaluation of two main components(the yield of ZDF and the proportion of IDF),all three IDF,SDF and ZDF ranked at the top 10 were Wanhei No.1,Gangliu,Yicheng Sanbai and Heyinbopi which can be used as extraction dietary fiber in the future.
