摘 要:目的分别采用铬天青S比色法、石墨炉原子吸收法(GF-AAS)和等离子体质谱法(ICP-MS)检测面制品中铝的含量,比较3种检测方法的优缺点,为不同条件的实验室选择合适的Al检测方法提供参考。方法面制品经微波消解前处理后,采用铬天青S比色法、GF-AAS和ICP-MS 3种方法检测样品中的铝含量。比较3种检测方法的线性范围、检测限、检测结果、精确度和加标回收的差异,并采用F检验和P值比较3种检测方法测定结果的差异性。结果铬天青S比色法的定量限和检出限分别为1.0 mg/kg和0.25 mg/kg。GF-AAS测定铝的方法定量限为0.2 mg/kg,检出限为0.05 mg/kg;ICP-MS测定铝的定量限为0.1 mg/kg,检出限为0.025 mg/kg。当面制品中铝含量为100.0 mg/kg时,检测结果的F检验和P检验表明,3种检测方法的测定结果差异无统计学意义。结论与ICP-MS法和GF-AAS法相比,铬天青S比色法无需昂贵仪器,操作简单,检测结果的精密度和回收率良好,是县级检测机构测定面制品中铝含量的最佳选择。Objective The content of aluminium in flour products was determined by chromium azurol S colorimetric method,graphite furnace atomic absorption spectrometry(GF-AAS)and plasma mass spectrometry(ICP-MS),respectively.The advantages and disadvantages of the three methods were compared to provide reference for laboratories under different conditions to select appropriate Al detection methods.Methods After microwave digestion,the aluminum content in flour products was determined by chromazurol S colorimetry,GF-AAS and ICP-MS.The linear range,detection limit,accuracy of detection results and recovery of standard addition of the three detection methods were compared,and the differences of the results of the three detection methods were compared by F test and P value.Results The limit of quantification and detection limit of chromazurol S colorimetry were 1.0 mg/kg and 0.25 mg/kg,respectively.The quantification limit of GF-AAS method for determination of aluminum is 0.2 mg/kg and the detection limit is 0.05 mg/kg;the quantification limit of ICP-MS determination of aluminum is 0.1 mg/kg,and the detection limit is 0.025 mg/kg.When the aluminum content in the noodle product is100.0 mg/kg,the F test and P test of the test results show that there is no significant difference in the results of the three test methods.Conclusion Compared with ICP-MS and GF-AAS,chrome azure S colorimetry method does not require expensive equipment,is simple to operate,and has the best precision and recovery rate.It is the best choice for county-level testing agencies to determine the aluminum content in flour products.
