天然色素的提取、稳定性改进及其应用进展探究

摘　　要：天然色素是自然环境中常见的天然物质,也是当前应用研究的热点,在食品、药品和保健品等大健康领域研究较多,但综述性研究报道较少。鉴于此,本文针对天然色素的来源、分类和提取方法进行概述。基于天然色素应用过程中普遍存在稳定性较差的问题,归纳了天然色素稳定性的影响规律,并提出相应的稳定性改进方法。最后,针对天然色素应用范围,本文较为系统地探讨了天然色素在食品、医药保健、电池、包装印刷和智能检测等领域的应用现状以及未来发展趋势。Natural pigments are the common natural substances in the natural environment and are also a hot issue of current research. It has been widely used in the big health field such as food, plant and health care, but this type of review papers are less reported. In this paper, the sources, classification and extraction methods of various natural pigments were introduced. Based on the general problem of poor stability in the application of natural pigments,the influence law of natural pigment stability and proposes corresponding stability improvement methods were summarized. Finally, according to the application range of natural pigments, the application status and future development trends of natural pigments were systematically explored in the fields of food, medicine and health care,batteries, packaging and printing, and intelligent detection.
