摘  要:为探索SiO_(2)处理对油莎豆饼超临界、亚临界流体萃取油品质的影响,分析比较了亚临界丁烷萃取油(Subcritical butane extraction oil,SBEO)和超临界CO_(2)萃取油(Supercritical CO_(2)extraction oil,SCO_(2)EO)SiO_(2)处理前后的品质指标。结果表明,2种萃取油脂肪酸组成相近,SBEO中生育酚、β-胡萝卜素、磷脂总量和磷脂分量含量显著高于SCO_(2)EO(P<0.05),而酸价、过氧化值和植物甾醇含量低于后者。SiO_(2)精炼处理后,脂肪酸组成含量上基本不变,油色泽变浅,酸价和过氧化值均显著降低。油中微量成分含量降低,其中生育酚、植物甾醇和β-胡萝卜素保留率分别92.21%~98.34%、74.64%~83.72%和79.34%~82.77%。此外,经SiO_(2)精炼处理的油中磷脂总量可降低98%以上。SiO_(2)精炼处理可显著改善油莎豆饼超临界和亚临界萃取油品质。To explore the effect of SiO_(2)refining treatment on the quality of super-and sub-critical fluid extraction oil from tiger nut cake,the quality indexes of subcritical butane extraction oil(SBEO)and supercritical CO_(2) extraction oil(SCO_(2)EO)before and after treatment were compared.The results indicated that fatty acid compositions of the two crude oils were similar.The contents of tocopherol,β-carotene,total phospholipid and phospholipid components in SBEO were significantly higher than those in SCO_(2)EO(P<0.05),while acid value,peroxide value and phytosterol contents were lower.After SiO_(2)refining treatment,the fatty acid composition remained unchanged,the color of oils became lighter,and the acid value and peroxide value decreased significantly.The retention rates of tocopherol,phytosterol andβ-carotene were 92.21%~98.34%,74.64%~83.72%and 79.34%~82.77%,respectively.Moreover,total contents of phospholipid were reduced by more than 98%.In conclusion,SiO_(2)refining treatment could significantly improve the quality of super-critical and sub-critical extraction oil.
