质构仪测试不同阴离子乳化体系膏霜与感官评价结果的相关性研究

摘　　要：以四种常见的阴离子乳化剂制备出不同乳化体系的膏霜,并对该7款实验样品进行感官评价及质构仪参数分析评估。采用Pearson相关性及显著性分析方法,对7款不同膏霜的质构仪压缩模式测试和感官评价肤感指标进行显著性相关分析。结果表明,质构仪测试参数硬度、峰值压力、粘力、粘性及胶着性与枯草菌脂肽钠浓度呈现出强相关性,相关系数范围为0.962~0.990;硬度、峰值压力、粘力及粘性与涂抹性及水润感呈现出强相关性,其相关系数范围为-0.892~-0.974;而硬度、峰值压力、粘力、粘性与挑起性具有相关性,其相关系数范围为-0.783~-0.865。In this paper,the textural and sensory assessment of seven cream products with 4 types of anionic emulsifier were studied.The results of texture properties were compared with those of sensory evaluation by Pearson correlation analytical method to find out whether or not there were any correlation between them.The results indicated that the concentration of surfactin had strong correlation with the parameter of hardness,peak pressure,gumminess,cohesiveness and stickiness,and the correlation coefficients up to 0.962 to 0.990.The spreadability and moisture have a significant negative correlation with the textural hardness,peak pressure,gumminess and cohesiveness with correlation coefficient from-0.892 to-0.974,meanwhile the sensory assessment index pick-up also has a negative correlation with those four parameter of texture analyzer mention above,and the corrlation coefficient ranged from-0.783 to-0.865.
