摘　　要：壳聚糖涂膜技术被证明在水果保鲜上效果显著。但现有的文献对其在不同水果保鲜上的具体应用缺乏梳理和归纳。系统总结了壳聚糖涂膜保鲜的机理,并对其在不同水果中的具体应用进行了总结,以期为壳聚糖涂膜在相似水果保鲜上的进一步应用提供理论依据和技术参考。Chitosan coating technology has been proved to have a significant effect on fruit preservation.However,the existing literature lacks to comb and summarize the specific application of chitosan coating technology in different fruit preservation.In this paper,we systematically summarized the mechanism of chitosan coating preservation,and summarized its application in different fruits,in order to provide theoretical basis and technical reference for the further application of chitosan coating in similar fruit preservation.
