摘 要:“酒类酿造实验”是贵州大学面向酿酒工程专业本科生开设的一门专业实践教学课,实验教学内容丰富、实践性强,深受专业学生欢迎。2019年贵州大学酿酒工程专业获评国家级一流专业,面对酿酒工程专业学生,传统“酒类酿造实验”在内容设置方面缺乏专业特色,在教学模式、实验设备及考核机制方面也存在不足。以国家一流专业建设为契机,将酿酒工程专业特色与人才培养目标相结合,对酿酒工程专业“酒类酿造实验”的教学内容、教学方法和考核模式进行初步探索与研究。“Alcohol Brewing Experiment”is a professional practical teaching course offered by Guizhou University for undergraduates majoring in brewing engineering.The experimental teaching is rich in practical content and is welcomed by professional students.The major of Liquor Engineering of Guizhou University is rated as a national first-class major in 2019.Facing winemaking engineering students,traditional wine brewing experiments lack professional characteristics in content setting,and there are also deficiencies in teaching models,experimental equipment and assessment mechanisms.This paper takes the national first-class professional construction as an opportunity to combine the characteristics of the wine engineering specialty with the talent training objective,and conducts a preliminary exploration and research on the teaching content,teaching methods and assessment modes of the wine brewing experiment of the major of Liquor Engineering.
