摘  要:以‘瑞雪’苹果为试验材料,研究了盛花期后155、161、168、175 d采摘的苹果在低温贮藏期间(150 d)果实硬度、出汁率、失重率等指标的变化,探讨不同采收期‘瑞雪’苹果的贮藏特性。结果表明,随着贮藏时间的延长,各个采收期苹果的果实硬度、有机酸、出汁率和维生素C含量都呈下降趋势,失重率、细胞膜渗透率和过氧化物酶活性逐渐增大,可溶性固形物含量呈先升高后降低的趋势;采收期越迟,果实硬度、出汁率、失重率、有机酸含量越小,过氧化物酶活性越高,中期采摘的细胞膜渗透率最高。淀粉圈试验结果表明,盛花期后155 d和161 d采收的苹果分别在贮藏120 d后果实内部基本完全成熟,盛花期后168 d和175 d采收的苹果分别在贮藏90 d和60 d后果实基本达到成熟状态。The storage characteristics of ’Ruixue’apple in different harvest period(155, 161, 168, 175 d after full-bloom stage) during low temperature storage for 150 d were studied according to the changes in the physicochemical indices such as fruit hardness, juice yield, weight loss rate and so on. The results showed that with the extension of storage time, the hardness, organic acid, juice yield and VC content of apple fruit at each harvesting stage showed a decreasing trend while the weight loss rate, cell membrane permeability and peroxidase activity increased gradually, the soluble solid content showed a trend of first increasing and then decreasing. Moreover, the fruit hardness, juice yield rate, weight loss rate and organic acid content decreased with the harvest time delays while the peroxidase activity increased with it. The cell membrane permeability in the mid-picked apples was the highest. Amyloid circle test showed that the apples harvested in the 155 d and 161 d after full flowering were basically mature after the 120 days of storage while the apples harvested in the 168 d and 175 d after full flowering were basically mature after the 90 d and 60 d of storage, respectively.
