摘 要:花香型绿茶是指在传统绿茶加工工艺中加入创新工艺,生产的内质优良具有花香的创新绿茶。本文归纳总结了花香型绿茶的茶树品种选择和鲜叶采摘要求;梳理了花香型绿茶的工艺流程和环境控制、鲜叶处理以及做青、杀青、揉捻和干燥等关键技术要点,为研发品种更多、品质更高的花香型绿茶提供参考。Green teas with flowery aroma are new types of green tea with supreme internal quality,which are produced by traditional green tea processing technology plus innovative new technology.This paper reviews the research progress in techniques for processing green teas with flowery aroma,including fresh leaf requirements with regards to tea cultivars and plucking,environmental control,fresh leaf treatment,leaf manipulation,fixation,twisting and drying,which will provide reference for the development of flower flavor green teas.
