摘 要:鲜桃果肉细腻,水分丰富,含糖量高,在贮藏和运输期间易发生机械损伤、褐变、腐烂等损耗,影响鲜桃的品质,其保质期短导致鲜桃产业发展受限。鲜桃贮存保鲜技术应以鲜桃的生物特性和贮藏环境为研究点,通过研究鲜桃采摘后的外部因素、贮藏特性、品质变化及在不同温度下的储存情况等,根据鲜桃的品种和成熟度确定最佳的储存条件,利用田间预冷、鲜桃保鲜库选择、温度环境的实时控制,实现鲜桃的全程冷链,从而提高鲜桃品质,达到提高经济效益的目标。Fresh peach has delicate flesh,rich moisture and high sugar content.It is prone to mechanical damage,browning,decay and other losses during storage and transportation,which affects the quality of fresh peach.Its short shelf life limits the development of fresh peach industry.Fresh peach storage and preservation technology should take the biological characteristics and storage environment of fresh peach as the research point.By studying the external factors,storage characteristics,quality changes and storage conditions of fresh peach after picking,according to the variety and maturity of fresh peach,determine the best storage conditions,and make use of field pre cooling,fresh peach preservation warehouse selection and real-time control of temperature environment,realize the whole process cold chain of fresh peach,so as to improve the quality of fresh peach and achieve the goal of improving economic benefits.
