摘　　要：目的:本研究旨在通过不同的制胶方法,不同的螯合剂,探讨驴皮制胶过程中重金属的去除情况,以提高动物明胶的食用安全水平。方法 以驴皮为原料,利用三种制胶方法,碱法制胶、酸法制胶、酶法制胶,在制胶的过程中加入不同的螯合剂乙二胺四乙酸二钠、柠檬酸钠、磷酸二氢钾,利用电感耦合等离子体质谱法检测驴皮中的重金属含量。结果 在碱法制胶的过程中,三种螯合剂的添加对驴皮中砷、镉的去除效果很小,但螯合剂柠檬酸钠的添加,可以有效去除驴皮中铬的含量。在酸法制胶过程中,三种螯合剂的添加,对驴皮中四种重金属的去除效果都很小。在酶法制胶过程中,三种螯合剂的添加,对于砷、镉的去除效果很小,而螯合剂乙二胺四乙酸二钠、柠檬酸钠的添加,对于驴皮中铅的去除有一定的效果。结论 在添加螯合剂的制胶过程中,不同的制胶方法中重金属铬、砷、镉、铅的去除效果并不相同。Objective:This research aims to decrease heavy metals in the procedure of making gelatin by donkey skin and improve edible safe levels of it by different methods and different chelants.Methods:Three methods of making gelatin were used including sodium hydrate method,hydrochloric acid method and papain method,in which three chelants were added including edathamil disodium,sodium citrate and monopotassium phosphate.Inductively-coupled plasma mass spectrometry was used to determine the content of metals in donkey skin.Result:The data showed that the decrease of heavy metals in the procedures added by different chelants of making gelatin is not same.In the procedure of making gelatin using sodium hydrate,the decrease of arsenic and cadmium is very tiny by adding three chelants,but add of sodium citrate can decrease the content of chromium efficiently.In the procedure of making gelatin using hydrochloric acid,the addition of three chelants can decrease heavy metals in donkey skin very little.In the procedure of making gelatin using papain,the addition of three chelants can decrease arsenic and cadmium very tiny,but the addition of edetate disodium and sodium citrate can decrease the content of lead in some extent.Conclusion:In the procedure of making gelatin added by different chelants,the decrease of heavy metals is not same.
