摘　　要：乳制品因营养丰富而受到越来越多的消费者青睐,乳制品质量安全问题也越来越重视。安全风险认知是食品安全研究领域的重要内容。论文对乳制品安全风险认知的理论模型、主要影响因素以及风险防控措施进行概述,分析乳制品安全风险认知的研究现状,提出降低乳制品安全风险的对策与未来研究方向。Dairy products are favored by more and more consumers because of their rich nutrition.While the quality and safety of dairy products are paid increasing attention.Safety risk cognition is an important content in the field of food safety research.The theoretical model,main influencing factors risk prevention and control measures of dairy product safety risk cognition are summarized.The research status of dairy product safety risk cognition is analyzed,and the countermeasures and future research directions to reduce dairy product safety risk are put forward.
