摘 要:将本公司浓香型白酒发酵产生的副产物黄水配制成黄水酯化液,并对酿酒一车间产原酒质量不太理想的发酵窖池进行应用测试,结果发现对窖池进行了黄水酯化液的养护以后,窖泥的pH值及氨态氮、有效磷、有效钾的含量都比保养之前有了改善,原酒中己酸乙酯的含量也有明显提高。In this study the pit bottom water(a by-product of Nongxiang Baijiu production) was used to prepare esterifying liquid,and the esterifying liquid was applied to a fermentation pit that could not produce satisfactory crude liquor. The results showed that the pH value and the contents of ammonia nitrogen, effective phosphorus and effective potassium of the pit mud were improved after using the esterifying liquid. Meanwhile, the content of ethyl caproate in the crude liquor increased significantly.
