摘 要:以迪庆州种植的兰州百合、维西百合、多芽百合为原材料,测定营养成分、矿物元素及重金属等指标,评价高寒区百合鳞茎营养价值及安全性,探索其利用价值。结果表明:兰州百合、维西百合、多芽百合鳞茎氨基酸总量有显著差异,分别为97.01、123.00、110.02 mg/g;维西百合的氨基酸比值系数分SRC最高,为74.67,多芽百合的最低,为59.05;多芽百合的可溶性糖和还原糖含量最高,分别达到17.05%和1.25%;维西百合粗蛋白含量最高,为13.85%;兰州百合粗多糖含量最高,达到18.16%。3种百合鳞茎含有较丰富矿物元素,其中钾元素最丰富,其含量在663.5~1320 mg/100 g。铅、镉、铬、总砷、总汞五种重金属含量均处在较低的含量水平,符合国家食品限量标准要求。研究选取的3种百合均适合迪庆州高寒区种植栽培,可根据其成分及功能进行开发利用。In order to measure the utilization value and safety of lily in the alpine area of Diqing prefecture,three varieties of L.davidii var.willmottiae,L.taliense and L.nepalense in Diqing were used as materials to study the nutritional composition,mineral elements and heavy metal indexes in lilies.The results showed that the differences in amino acid content of L.davidii var.willmottiae,L.taliense and L.nepalense were significant,the corresponding content were 97.01 mg/g,123.00 mg/g and 110.02 mg/g respectively;which content ranges from 663.5 mg to 1320 mg/100 g.The five heavy metals of plumbum,cadmium,chromium,total arsenic and total mercury were all lower than the national food limits,which suggested the three varieties of lily are suitable for cultivation and can be exploited by components and functions in alpine areas of Diqing prefecture.
