摘  要:目的分析2020年三门峡市食品安全风险监测结果,了解三门峡市食品污染物的污染状况,为开展食品安全风险评估和标准制定、修订提供依据。方法按照国家食品安全风险监测方案的要求,对三门峡市所辖6个县(市、区)的8大类食品开展化学污染物及有害因素监测,对监测数据进行分析、比较。结果2020年共监测345份食品,合格318份,合格率为92.17%。不合格的样品和项目为芋头中的铅和铬,油条中的含铝添加剂,熟肉中的亚硝酸盐,膨化食品中的丙烯酰胺。结论针对本市市售食品安全的实际情况,建议监管部门加强监管力度,重点监管合格率较低的街头摊点、摊位和小型餐饮店,规范食品经营行为,消除食品安全隐患,采取综合治理对策,控制和减少有害金属对食品的污染,有效保障全市食品安全。Objective To know the pollution status of food contaminants by analyzing the results of the food safety risk monitoring in Sanmenxia City in 2020,so as to provide basis for an assessment of risk and standards and revisions for food safety.Methods According to the requirements of the national food safety risk monitoring program,we monitored chemical pollutants and harmful factors of eight kinds of food,and then analyzed and compared the data in 6 counties(cities,districts)of Sanmenxia.Results A total of 345 food samples were monitored in 2020,of which 318 food samples were qualified,with the qualified rate was 92.17%.The unqualified samples and items included lead and chromium in taro,aluminum in deep-fried dough sticks,nitrite in cooked meats,acrylamide in puffed food.Conclusion According to the actual situation of food safety in Sanmenxia,it is suggested that regulators strengthen supervision on food safety,the key regulatory objects are street vendors,stalls and small restaurants of which the qualified rate are low,regulate the behaviors of food management,eliminate the danger risks of food safety,take comprehensive countermeasures to control and reduce the harmful metal contamination in food,ensure the food safety effectively in Sanmenxia.
