摘 要:为了尽可能的减少黄酒贮存过程中浑浊与沉淀的问题,延长黄酒的货架期,提高饮用舒适度,应用快速冷冻过滤技术对黄酒进行试验,得出黄酒快速冷冻工艺技术参数,原酒酒体温度为12℃,快速冷冻过滤温度为-6℃。快速冷冻过滤后的酒体酒精度、总糖、氨基酸态氮、非糖固形物含量基本没有变化,总酸、高级醇、生物胺等有所下降,一方面延长了酒的货架期,一年以后基本没有沉淀产生,另一方面改善了酒的品质,饮后舒适度大大提高,品质可控,有效节约了能源。In order to solve the problem of turbidity and precipitation in the storage process of Huangjiu,and to improve the shelf life and drinking comfort of Huangjiu,the rapid freezing filtration technology was tested,and the technical parameters were determined:the temperature of the original Huangjiu was 12℃,and the rapid freezing filtration temperature was-6℃.After the rapid freezing filtration,the alcohol content,total sugars,amino acid nitrogen and non-sugar solidity of Huangjiu did not change,while the total ac-ids,higher esters and biogenic amines decreased.After the treatment,the shelf life of Huangjiu got improved,with almost no precipi-tation after a year.Meanwhile,the quality and drinking comfort of Huangjiu got improved,and the energy cost was effectively saved.
