摘  要:以阿萨姆红碎茶为研究对象,探讨0~40 kGy剂量范围内^(60)Co-γ辐照处理对其品质相关内含成分的影响。结果表明:当辐照剂量在0~40 kGy内,随着辐照剂量的增加,红碎茶水浸出物、没食子酸、可溶性糖含量呈增加趋势;茶多酚、儿茶素、游离氨基酸总量、生物碱含量呈上下波动,无显著规律;茶黄素含量在0~6 kGy呈上升趋势,超过15 kGy显著下降。研究结果证实辐照处理能够提高红碎茶的品质,对辐照技术在茶叶中的应用具有指导价值。In this experiment,the effect of ^(60)Co-γirradiation in the dose range of 0-40 kGy on the quality and related chemical components of Assam broken black tea was investigated.The results showed that the contents of water extracts,gallic acid and soluble sugars of Assam broken black tea increased with the irradiation dose increase from 0 to 40 kGy,and the total amount of tea polyphenols,catechins,free amino acids and alkaloids fluctuated up and down without obvious regularities.The content of theaflavins presented an upward trend at 0-6 kGy,but decreased significantly when the irradiation dose was more than 15 kGy.The results indicated that irradiation could improve the quality of broken black tea,which has guiding value for the application of irradiation technology in tea industry.
