摘 要:目的 了解郑州市各类食品中致病性微生物的分布及污染状况,为食品安全监管提供科学依据。方法 参考《国家食品污染和有害因素风险监测工作手册》和《河南省食品安全风险监测方案》样品采集及检验方法,对样品中所含铜绿假单胞菌、克罗诺杆菌属、金黄色葡萄球菌、沙门氏菌、蜡样芽孢杆菌、单核细胞增生李斯特氏菌、梭状芽孢杆菌等14种致病菌进行监测分析。结果 13类食品共计320份样品共检出致病菌34株,总检出率为10.63%(34/320),检出率较高的有蜡样芽孢杆菌(16.67%),克罗诺杆菌(15.38%),产气荚膜梭菌(13.79%),沙门氏菌(8.37%)。不同食品中致病菌检出率最高的是生肉与生肉制品(70.27%),其次为餐饮食品(36.36%),冲调谷物制品(15.38%),桶装饮用水(7.69%)。结论 郑州市抽检食品受到食源性致病菌不同程度的污染,应加大开展食品安全风险监测区域、监测数量、监测项目及监测频次,及时掌握特定食品中或特定微生物污染水平,掌握食源性致病菌的变化趋势,为政府食品安全监管提供科学信息,切实提高本市食品安全保障能力和水平。Objective To investigate the distribution and pollution of food-borne pathogens in food in Zhengzhou, so as to provide scientific basis for the prevention of food-borne diseases.Methods According to the method of Workbook for Monitoring on National Food Pollution Contamination and Hazardous Factors Risk and the Food Safety and Risk Monitoring Program in Henan Province, samples were collected and tested, 14 kinds of monitored pathogenic bacteria contained in the samples were analyzed, such as Pseudomonas aeruginosa, Cronobacter, Staphylococcus aureus, Salmonella, Bacillus cereus, Listeria monocytogenes, Clostridium, and so on.Results A total of 320 food samples were tested in Zhengzhou from 2019 to 2020,and 34 strains of pathogens were detected, with a total positive detection rate of 10.63%(34/320).The higher detection rates were Bacillus cereus(16.67%),Cronobacter(15.38%),Clostridium perfringens(13.79%),Salmonella(8.37%).The highest detection rate of pathogenic bacteria in different foods is meat and meat products(70.27%),followed by food and beverage(36.36%),prepared grain products(15.38%),and bottled drinking water(7.69%).Conclusion There were different degrees of pollution in spot-check food with food-borne pathogenic bacteria in Zhengzhou.The risk monitoring of areas, quantities, items and frequencies of food safty should be strengthened, to keep abreast of pollution levels of specific foods or specific microorganisms timely, grasp the changing trends of foodborne pathogenic bacteria, and to provide scientific information of food safety supervision for government, with the goal of improving the city’s food safety assurance capacity and level effectively.
