摘　　要：为研究出口盐渍肠衣携带细菌的总体水平和需氧芽孢的情况,对5份盐渍猪肠衣和5份盐渍羊肠衣分别进行了菌落总数测定和需氧芽孢计数,并从需氧芽孢计数平板(DTA)上随机挑取41株细菌进行纯化鉴定。研究表明,盐渍羊肠衣和猪肠衣的菌落总数分别为50 CFU/g~8.0×10^(2)CFU/g和1.4×10^(2)CFU/g~2.4×10^(3)CFU/g;需氧芽孢数分别为0 CFU/g~26 CFU/g和4 CFU/g~1.2×10^(2)CFU/g。41株细菌经16S rDNA测序,显示为芽孢杆菌属(Bacillus)的11种细菌,其中热带芽孢杆菌(B.tropicus)、高地芽孢杆菌(B.altitudinis)和巨大芽孢杆菌(B.megaterium)为优势菌株。另外,还从2份肠衣样品中分别鉴定出1株蜡样芽孢杆菌(B.cereus)。结果显示,出口盐渍肠衣携带的细菌数量和需氧芽孢数相对较低,但携带需氧芽孢菌的种类较多,其中包括了致病性的蜡样芽孢杆菌。To study the overall level of bacteria and the situation of aerobic bacterial spores carried by export salted casings,five salted sheep casings and five salted hog casings were sampled for determination of the bacterial colony counts and aerobic bacterial spores.In addition,41 strains of aerobic sporeforming bacteria,which isolated randomly from the Dextrose Tryptone Agar(DTA)plate for enumeration of aerobic bacterial spores,were purified and identified.It showed that the determination of bacterial colony counts in five salted sheep casings and five salted hog casings were found to be 50-8.0×10^(2)CFU/g and 1.4×10^(2)-2.4×10^(3)CFU/g,and the enumeration of aerobic bacterial spores were about 0-26 CFU/g and 4-1.2×10^(2)CFU/g,respectively.Based on the analyses of 16S rDNA sequences,the results showed that 11 species of bacteria belonging to Bacillus genus were identified,and the main bacterial species were B.tropicus,B.altitudinis and B.megaterium.In addition,two strains of B.cereus isolated from two independent samples were also identified.This study revealed that the bacterial colony counts and aerobic bacterial spores carried by export salted casings were relatively low,but a large variety of aerobic sporeforming bacteria were present,and pathogenic strains of B.cereus were included.
